  • 1 tablespoon cornstarch (optional, for thickening)
  • 2 tablespoons water (if using cornstarch)
  • 1 tablespoon sesame seeds (optional for garnish)

Instructions

  1. Place the chicken breasts in the slow cooker.
  2. In a medium bowl, whisk together the soy sauce, honey, rice vinegar, brown sugar, garlic, ginger, and sesame oil. Pour this mixture over the chicken in the slow cooker.
  3. Cover and cook on low for 4-6 hours or on high for 2-3 hours, until the chicken is cooked through and tender.
  4. If you prefer a thicker sauce, mix the cornstarch with water to create a slurry. Add this to the slow cooker during the last 30 minutes of cooking and stir to thicken the sauce.
  5. Once the chicken is fully cooked, shred the chicken using two forks and stir it into the sauce.
  6. Serve the chicken over steamed rice, garnished with sesame seeds and sliced green onions, if desired.
