Slow Cooker Corned Beef & Cabbage is a classic and comforting dish that’s perfect for St. Patrick’s Day or any time you’re craving hearty, flavorful comfort food. The tender corned beef is slow-cooked with cabbage, potatoes, carrots, and onions for a meal that’s simple yet satisfying.

- 3–4 lb corned beef brisket (with seasoning packet)
- 6–8 small potatoes, halved or quartered
- 4 large carrots, peeled and cut into large chunks
- 1 medium onion, quartered
- 1 small head of cabbage, cut into wedges
- 4 cups low-sodium beef broth (or water)
- 2 tablespoons apple cider vinegar
- 1 teaspoon black peppercorns
- 2–3 bay leaves
- 1/2 teaspoon mustard seeds (optional)
- 1 teaspoon garlic powder (optional)
Instructions
- Place the corned beef brisket into the bottom of the slow cooker, fat side up. Sprinkle the seasoning packet from the corned beef over the brisket.
- Add the halved potatoes, carrots, and quartered onion to the slow cooker, arranging them around the corned beef.
- Pour in the beef broth (or water) and apple cider vinegar. Add the black peppercorns, bay leaves, and mustard seeds (if using).
- Cover the slow cooker and cook on low for 7-8 hours, or until the corned beef is tender and easily shreds with a fork.
- About 30 minutes before serving, add the cabbage wedges to the slow cooker, placing them on top of the other ingredients. Cover and cook for an additional 30 minutes, or until the cabbage is tender.
- Once everything is cooked, remove the corned beef from the slow cooker and slice against the grain. Serve with the vegetables on the side.
- Optionally, serve with mustard or horseradish on the side.
Notes
- If you prefer a thicker broth, you can reduce the liquid by cooking the corned beef without the lid for the last hour or so.
- For added flavor, you can add a few whole cloves to the corned beef or a splash of beer (like a stout) in place of some of the beef broth.
- Leftovers make great sandwiches or can be used in corned beef hash the next day.
