Instructions
- Sear the Roast: In a large skillet, heat olive oil over medium-high heat. Season the chuck roast generously with salt and pepper. Once the oil shimmers, sear the roast on all sides for 1-2 minutes per side until browned.
- Slow Cook: Transfer the seared roast and any pan juices to the slow cooker. Sprinkle the dry onion soup mix over the roast, then add water and beef broth. Cover and cook on high for 4-6 hours or on low for 8-10 hours until the meat is tender and shreds easily.
