Description

  • 2 (14.5-ounce) cans beef broth
  • 68 slices Swiss or provolone cheese
  • 68 crusty rolls (such as ciabatta)

Instructions

  • Sear the Roast: In a large skillet, heat olive oil over medium-high heat. Season the chuck roast generously with salt and pepper. Once the oil shimmers, sear the roast on all sides for 1-2 minutes per side until browned.
  • Slow Cook: Transfer the seared roast and any pan juices to the slow cooker. Sprinkle the dry onion soup mix over the roast, then add water and beef broth. Cover and cook on high for 4-6 hours or on low for 8-10 hours until the meat is tender and shreds easily.
  • Shred the Meat: Once the roast is fully cooked, remove it from the slow cooker and shred with a fork.
  • Assemble Sandwiches: Place shredded meat on each crusty roll, top with a slice of Swiss or provolone cheese, and toast under the broiler until the cheese is melted and the roll is lightly toasted.
  • Serve with Au Jus: Pour the cooking juices from the slow cooker into small bowls for dipping and serve alongside the sandwiches.
