Ingredients
Scale
- 1/2 cup (125g) unsalted butter, softened
- 1/2 cup (100g) granulated sugar
- 2 large eggs
- 1 cup (125g) self-raising flour
- 1/4 cup (60ml) milk
- 1 tsp vanilla extract
- 1/3 cup (100g) golden syrup (plus extra for drizzling)
Instructions
- Grease a pudding basin or heatproof bowl that fits your slow cooker.
- Pour the golden syrup into the bottom of the prepared basin.
- In a bowl, cream together the butter and sugar until light and fluffy.
- Beat in the eggs, one at a time, then stir in vanilla extract.
- Fold in the flour, alternating with milk, until you have a smooth batter.
- Spoon the batter gently over the golden syrup in the basin.
- Cover the basin with foil or a lid, then place it into the slow cooker.
- Pour boiling water into the slow cooker until it reaches halfway up the sides of the basin.
- Cover and cook on high for 2.5 to 3 hours, until the sponge is set and springy.
- Carefully lift out, remove foil, and invert onto a plate. Drizzle with more syrup and serve warm.
Notes
- Swap golden syrup with maple syrup or honey if needed, though the flavor will vary.
- Serve with warm custard, ice cream, or clotted cream.
- Leftovers can be reheated in the microwave for 30–40 seconds.
- Double the recipe for a crowd—just extend cooking time by 30–60 minutes.
