Description

This Slow Cooker Golden Syrup Sponge is a classic British dessert made easy! Rich, buttery sponge cake infused with golden syrup, slow-cooked to warm, gooey perfection. It’s the ultimate comfort food, ideal with custard or ice cream for a cozy dessert night.

  • 1/2 cup (125g) unsalted butter, softened
  • 1/2 cup (100g) granulated sugar
  • 2 large eggs
  • 1 cup (125g) self-raising flour
  • 1/4 cup (60ml) milk
  • 1 tsp vanilla extract
  • 1/3 cup (100g) golden syrup (plus extra for drizzling)

Instructions

  1. Grease a pudding basin or heatproof bowl that fits your slow cooker.
  2. Pour the golden syrup into the bottom of the prepared basin.
  3. In a bowl, cream together the butter and sugar until light and fluffy.
  4. Beat in the eggs, one at a time, then stir in vanilla extract.
  5. Fold in the flour, alternating with milk, until you have a smooth batter.
  6. Spoon the batter gently over the golden syrup in the basin.
  7. Cover the basin with foil or a lid, then place it into the slow cooker.
  8. Pour boiling water into the slow cooker until it reaches halfway up the sides of the basin.
  9. Cover and cook on high for 2.5 to 3 hours, until the sponge is set and springy.
  10. Carefully lift out, remove foil, and invert onto a plate. Drizzle with more syrup and serve warm.
