- 1 tbsp paprika
- 1 tsp onion powder
- 1 tsp garlic powder
- 1 tsp dried thyme
- 1/2 tsp dried rosemary
- 1/2 tsp dried oregano
- 1/2 tsp salt
- 1/2 tsp black pepper
- 1 lemon, halved
- 4 cloves garlic, smashed
- 1 onion, quartered (optional)
- 1 cup chicken broth (optional, for extra moisture)
Instructions
- Prepare the Chicken: Pat the whole chicken dry with paper towels. This helps the skin crisp up as it cooks.
- Season the Chicken: Rub the chicken all over with olive oil. In a small bowl, combine the paprika, onion powder, garlic powder, thyme, rosemary, oregano, salt, and black pepper. Sprinkle this seasoning mixture evenly over the chicken, rubbing it into the skin.
- Add Aromatics: Stuff the cavity of the chicken with the halved lemon, smashed garlic cloves, and quartered onion (if using).
- Place in the Slow Cooker: Place the seasoned chicken in the slow cooker breast-side up. Optionally, pour the chicken broth into the bottom of the slow cooker to add extra moisture during cooking, though it’s not necessary if you prefer a crisper skin.
- Cook: Cover and cook on low for 6-7 hours or on high for 3-4 hours, or until the chicken reaches an internal temperature of 165°F (74°C) at the thickest part of the thigh.
- Finish (Optional): For crispy skin, you can transfer the cooked chicken to a baking sheet and broil it in the oven for 3-5 minutes until the skin crisps up to your liking.
- Rest and Serve: Let the chicken rest for 10 minutes before carving and serving. Enjoy your juicy, tender rotisserie-style chicken!
