Description

This Slow Cooker Rotisserie Chicken is an easy and flavorful way to enjoy a tender, juicy, and perfectly seasoned whole chicken, all without turning on the oven! With minimal effort, you can create a delicious rotisserie-style chicken right in your slow cooker. Ideal for a comforting dinner or meal prep for the week.

Ingredients

Scale
  • 1 whole chicken (34 lbs)
  • 2 tbsp olive oil
  • 1 tbsp paprika
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • 1 tsp dried thyme
  • 1/2 tsp dried rosemary
  • 1/2 tsp dried oregano
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1 lemon, halved
  • 4 cloves garlic, smashed
  • 1 onion, quartered (optional)
  • 1 cup chicken broth (optional, for extra moisture)

Instructions

  1. Prepare the Chicken: Pat the whole chicken dry with paper towels. This helps the skin crisp up as it cooks.
  2. Season the Chicken: Rub the chicken all over with olive oil. In a small bowl, combine the paprika, onion powder, garlic powder, thyme, rosemary, oregano, salt, and black pepper. Sprinkle this seasoning mixture evenly over the chicken, rubbing it into the skin.
  3. Add Aromatics: Stuff the cavity of the chicken with the halved lemon, smashed garlic cloves, and quartered onion (if using).
  4. Place in the Slow Cooker: Place the seasoned chicken in the slow cooker breast-side up. Optionally, pour the chicken broth into the bottom of the slow cooker to add extra moisture during cooking, though it’s not necessary if you prefer a crisper skin.
  5. Cook: Cover and cook on low for 6-7 hours or on high for 3-4 hours, or until the chicken reaches an internal temperature of 165°F (74°C) at the thickest part of the thigh.
  6. Finish (Optional): For crispy skin, you can transfer the cooked chicken to a baking sheet and broil it in the oven for 3-5 minutes until the skin crisps up to your liking.
  7. Rest and Serve: Let the chicken rest for 10 minutes before carving and serving. Enjoy your juicy, tender rotisserie-style chicken!

Notes

  • You can use any combination of herbs and spices you like, depending on your flavor preferences.
  • The chicken broth is optional and helps keep the chicken moist, but the slow cooker creates enough moisture on its own to cook the chicken.
  • This recipe is great for meal prepping—use the leftovers in soups, salads, or sandwiches.
