Description

  • This Slow Cooker Sausage Casserole is a hearty, comforting dish that combines flavorful sausage, tender vegetables, and savory seasonings. It’s the perfect meal for a busy weeknight or a cozy weekend dinner. Simply toss everything into the slow cooker, let it cook low and slow, and you’ll have a delicious, easy meal ready to serve. Ideal for those who love simple, one-pot meals that don’t require much effort.

Ingredients

Scale
  • 1 lb (450g) sausage (pork, chicken, or turkey – your choice)

  • 1 medium onion, chopped

  • 2 cloves garlic, minced

  • 1 1/2 cups baby carrots, sliced

  • 1 1/2 cups potatoes, diced (Yukon Gold or Russet work well)

  • 1 can (14.5 oz) diced tomatoes, undrained

  • 1 cup chicken broth

  • 1 teaspoon dried thyme

  • 1 teaspoon dried oregano

  • 1/2 teaspoon paprika

  • Salt and pepper to taste

  • 1 cup frozen peas

  • 1 cup shredded cheese (cheddar or mozzarella – optional, for topping)

Instructions

  1. Prepare the Sausage:

    • If using whole sausages, slice them into 1-inch pieces.

    • In a skillet over medium heat, cook the sausage until browned, about 5-7 minutes, breaking it up into smaller pieces as it cooks. If using pre-cooked sausage, simply slice it and skip this step.

  2. Add Ingredients to Slow Cooker:

    • Transfer the cooked sausage (or sliced uncooked sausage) to the slow cooker.

    • Add the chopped onion, minced garlic, sliced carrots, diced potatoes, diced tomatoes (with juice), chicken broth, dried thyme, dried oregano, paprika, salt, and pepper.

  3. Cook:

    • Stir the mixture together, then cover the slow cooker and cook on low for 6-8 hours or on high for 3-4 hours, until the vegetables are tender and the sausage is fully cooked.

  4. Add Frozen Peas:

    • About 30 minutes before serving, stir in the frozen peas. Continue cooking for the remaining time.

  5. Top with Cheese (Optional):

    • If you’d like to add a cheesy topping, sprinkle shredded cheese over the casserole about 10-15 minutes before serving. Cover to allow the cheese to melt.

  6. Serve:

    • Stir everything together before serving, and enjoy your hearty Slow Cooker Sausage Casserole
