Ingredients
Scale
- 4 boneless, skinless chicken breasts or thighs
- 2 tbsp olive oil
- 1 medium onion, diced
- 3 cloves garlic, minced
- 2 cups baby carrots
- 2 medium potatoes, peeled and diced
- 1 cup celery, chopped
- 1 cup frozen peas
- 1 cup dry white wine
- 4 cups low-sodium chicken broth
- 1 tsp dried thyme
- 1/2 tsp dried rosemary
- 1 bay leaf
- Salt and pepper to taste
- 2 tbsp all-purpose flour (optional, for thickening)
- Fresh parsley, chopped (for garnish)
Instructions
- Sear the Chicken:
Heat olive oil in a skillet over medium heat. Season the chicken breasts or thighs with salt and pepper, then sear them in the skillet for about 3–4 minutes per side until golden brown. Transfer the chicken to the slow cooker. - Add the Vegetables:
Add the diced onion, garlic, carrots, potatoes, and celery to the slow cooker. - Add Liquids and Seasonings:
Pour the white wine and chicken broth over the chicken and vegetables. Add the dried thyme, rosemary, and bay leaf. Season with salt and pepper to taste. - Cook the Stew:
Cover and cook on low for 6–7 hours or high for 3–4 hours, until the chicken is cooked through and the vegetables are tender. - Shred the Chicken:
Remove the chicken from the slow cooker and shred it using two forks. Return the shredded chicken to the stew. - Thicken the Stew (optional):
If you prefer a thicker stew, mix 2 tbsp of flour with a little water to form a slurry. Stir this into the stew and cook for another 20–30 minutes until thickened. - Add Peas and Final Touches:
Stir in the frozen peas and cook for an additional 10 minutes. Remove the bay leaf. Garnish with chopped fresh parsley before serving. - Serve and Enjoy:
Notes
- Storage: Store leftovers in an airtight container in the fridge for up to 3 days.
- Freezing: You can freeze the stew (without the peas) for up to 3 months. Reheat thoroughly before serving.
- Wine Substitution: If you don’t want to use wine, you can substitute with an extra cup of chicken broth for a non-alcoholic version.
