Small Batch Lemon Bars are a delightful, tangy treat with a buttery, crumbly crust and a smooth, citrusy filling. Perfect for when you want a fresh, lemony dessert but don’t need a full pan. These bars are easy to make and perfect for sharing with a few friends or family members.

- For the crust:
- 1/2 cup all-purpose flour
- 1/4 cup powdered sugar
- 1/4 teaspoon salt
- 1/4 cup unsalted butter, softened
- For the filling:
- 2 large eggs
- 1/2 cup granulated sugar
- 1/4 cup fresh lemon juice (about 2 lemons)
- 1 tablespoon lemon zest
- 1/4 cup all-purpose flour
- 1/4 teaspoon baking powder
- Powdered sugar for dusting (optional)
Instructions
- Preheat the oven to 350°F (175°C). Grease or line an 8×8-inch baking pan with parchment paper.
- To make the crust, combine the flour, powdered sugar, and salt in a medium bowl. Add the softened butter and mix until the dough comes together. Press the dough into the bottom of the prepared pan, forming an even layer.
- Bake the crust for 10–12 minutes, or until lightly golden brown.
- While the crust is baking, prepare the filling. In a separate bowl, whisk together the eggs and granulated sugar until smooth and combined. Add the lemon juice, lemon zest, flour, and baking powder, and whisk until smooth.
- Once the crust is done, pour the lemon filling over the hot crust. Return to the oven and bake for 18–20 minutes, or until the filling is set and lightly golden around the edges.
- Remove from the oven and let cool to room temperature. Once cooled, dust with powdered sugar (optional) and cut into squares or bars.
- Chill the lemon bars in the refrigerator for a firmer texture before serving if desired.
Notes
- For an extra lemony flavor, you can add more zest to the filling.
- These bars can be stored in the refrigerator for up to 3 days.
- If you prefer a firmer crust, you can press the dough down more firmly before baking.
