For the Smash Pork:
- 1 lb ground pork
- 2 cloves garlic, minced
- 1 tbsp soy sauce
- 1 tbsp fish sauce
- 1 tbsp hoisin sauce
- 1 tsp sesame oil
- 1 tsp sugar
- Pinches of salt and pepper
For the Pickled Vegetables:
- 1 cup shredded carrots
- 1 cup thinly sliced daikon radish
- 1/2 cup rice vinegar
- 1/4 cup sugar
- 1/4 tsp salt
- 1 cup water
For the Tacos:
- 8 small corn or flour tortillas
- 1/4 cup fresh cilantro, chopped
- 1–2 fresh chilies, sliced (optional)
- 1/2 cup mayonnaise
- 1 tbsp sriracha sauce
- Lime wedges for garnish
Instructions
- Make the Pickled Vegetables:
In a small bowl, combine rice vinegar, sugar, salt, and water. Stir until sugar dissolves.
Add the shredded carrots and daikon radish, toss to coat, and refrigerate for at least 15 minutes to pickle. - Prepare the Smash Pork:
In a large bowl, combine ground pork, garlic, soy sauce, fish sauce, hoisin sauce, sesame oil, sugar, salt, and pepper.
Mix until well combined.
Heat a large skillet or griddle over medium-high heat. Form small patties of the pork mixture and cook for about 3-4 minutes per side, pressing them down with a spatula to get a crispy, smashed texture. - Make the Spicy Mayo:
In a small bowl, mix together mayonnaise and sriracha sauce. Adjust to your desired level of heat. - Assemble the Tacos:
Warm the tortillas on a skillet or grill.
Spread a bit of spicy mayo on each tortilla.
Place the crispy smashed pork patties on the tortillas, then top with pickled vegetables.
Garnish with fresh cilantro and sliced chilies, if desired. - Serve and Enjoy:
Serve immediately with lime wedges on the side.
Notes
- You can swap the ground pork for ground chicken or beef for a different variation.
- Add more or less sriracha sauce depending on your spice preference.
- If you want more crunch, try adding fresh cucumber slices to the tacos.
