  • 2 cups beef broth

Instructions

  • Preheat your oven to 450°F (230°C).
  • Pat the prime rib roast dry with paper towels to ensure a crispy crust.
  • In a small bowl, combine olive oil, garlic, rosemary, thyme, Dijon mustard, salt, pepper, smoked paprika, and onion powder.
  • Rub the mixture all over the prime rib roast, ensuring it’s well coated.
  • Place the roast bone-side down in a roasting pan on a rack.
  • Roast the prime rib for 20 minutes at 450°F (230°C), then reduce the oven temperature to 350°F (175°C).
  • Continue roasting for 15-20 minutes per pound, or until the internal temperature reaches 120°F (49°C) for rare, 130°F (54°C) for medium-rare, or 140°F (60°C) for medium.
  • Remove the roast from the oven and let it rest for at least 15-20 minutes before carving.
  • For the gravy (optional), melt butter in a pan over medium heat. Whisk in flour and cook for 1 minute, then slowly whisk in beef broth. Bring to a simmer and cook until thickened.
  • Serve the prime rib with gravy (optional), and enjoy!
