Description

  • 1.5 cups cubed gouda cheese (170g / 6oz)
  • 2 cups cubed smoked gouda cheese (227g / 8oz)
  • 1 cup heavy cream
  • 7 tbsp unsalted butter
  • 4 garlic cloves, chopped
  • 1.5 tsp salt (adjust to taste)
  • 12 tsp ground white pepper (depending on your heat tolerance)
  • 1/4 cup chives, chopped (for garnish)

Instructions

  • Use a potato ricer for the creamiest texture, but if you don’t have one, a block grater works (allow potatoes to cool slightly before grating).
  • Keep the cheese sauce on low heat to avoid burning and stir frequently for a smooth consistency.

Notes

  1. Prepare the Potatoes: Wash and peel the potatoes, then chop them into large chunks (about 2-inch cubes). Place them in a large pot, submerge in cold water, add 1 tbsp salt, stir, and bring to a boil. Boil until fork-tender, about 10 minutes. Strain once tender.
  2. Make the Cheese Sauce: In a large pan over low heat, melt 6 tablespoons of butter until sizzling. Add chopped garlic and sauté until golden brown, about 5 minutes. Be careful not to burn the garlic. Stir in 1 cup of heavy cream and heat until warm. Gradually add cubed gouda and smoked gouda cheese in 2-3 portions, stirring continuously until melted and smooth. Season with 1.5 teaspoons salt and white pepper.
  3. Combine and Bake: Using a potato ricer, rice the boiled potatoes into a large bowl. Pour the cheese sauce over the riced potatoes and mix until well combined. Preheat the oven to 350°F (175°C). Spray a baking dish with nonstick spray, scoop in the mashed potatoes, and spread evenly. Brush with the remaining 1 tablespoon of melted butter.
  4. Bake: Bake for 20 minutes, then broil for an additional 3-6 minutes until golden brown on top.
  5. Serve: Garnish with chopped chives and serve hot.
