Description

Smoked Mexican Street Corn Dip is a smoky, creamy, and tangy appetizer inspired by the popular elote street corn. Packed with grilled corn, cream cheese, cotija cheese, and a blend of Mexican spices, this dip is perfect for parties or casual snacking.

Ingredients

Scale
  • 4 cups grilled or smoked corn kernels
  • 8 oz cream cheese, softened
  • 1/2 cup mayonnaise
  • 1/2 cup crumbled cotija cheese
  • 1 tablespoon lime juice
  • 1 teaspoon chili powder
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon garlic powder
  • 1/4 cup chopped fresh cilantro
  • Salt and pepper to taste

Instructions

  1. In a large bowl, combine softened cream cheese, mayonnaise, lime juice, chili powder, smoked paprika, and garlic powder until smooth.
  2. Add the grilled corn kernels, cotija cheese, and chopped cilantro. Mix well.
  3. Season with salt and pepper to taste.
  4. Transfer the mixture to a serving dish and refrigerate for at least 30 minutes to allow flavors to meld.
  5. Serve chilled or at room temperature with tortilla chips, crackers, or fresh veggies.

Notes

  • For extra smokiness, grill fresh corn on the cob before cutting kernels off.
  • Add diced jalapeños for a spicy kick.
  • This dip can be prepared a day ahead for better flavor development.
