Description
Smoky Cheesy Jalapeño Chicken Rolls are a deliciously spicy and cheesy chicken dish wrapped in a crispy golden crust. The combination of smoky flavors from the chicken, heat from the jalapeños, and creamy cheese creates a mouthwatering bite that’s perfect for dinner or as a party appetizer.
Ingredients
For the Chicken Filling:
-
2 lbs boneless, skinless chicken breasts (or thighs), cooked and shredded
-
1 cup cream cheese, softened
-
1 cup shredded cheddar cheese
-
1/2 cup shredded mozzarella cheese
-
2–3 jalapeños, finely chopped (seeds removed for less heat)
-
1 tablespoon smoked paprika
-
1 teaspoon garlic powder
-
1/2 teaspoon onion powder
-
1/2 teaspoon cumin
-
1/2 teaspoon chili powder
-
Salt and pepper to taste
-
1 tablespoon fresh cilantro, chopped (optional)
For the Rolls:
-
8 large flour tortillas
-
1 tablespoon olive oil or melted butter (for brushing)
For the Dipping Sauce (optional):
-
1/4 cup ranch dressing
-
1 tablespoon hot sauce (optional for extra heat)
Instructions
-
Preheat the Oven:
-
Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper or lightly grease it.
-
-
Prepare the Chicken Filling:
-
In a large mixing bowl, combine the shredded cooked chicken, cream cheese, shredded cheddar cheese, shredded mozzarella cheese, finely chopped jalapeños, smoked paprika, garlic powder, onion powder, cumin, chili powder, salt, and pepper. Mix everything together until well combined. If you want extra freshness, stir in chopped cilantro.
-
-
Assemble the Rolls:
-
Lay out the flour tortillas on a flat surface.
-
Spread a generous amount of the chicken filling evenly across each tortilla, leaving about 1 inch from the edges.
-
Roll up each tortilla tightly, making sure the filling is enclosed inside.
-
-
Brush with Oil or Butter:
-
Place the rolled tortillas seam side down on the prepared baking sheet.
-
Brush each roll lightly with olive oil or melted butter to help it crisp up in the oven.
-
-
Bake the Chicken Rolls:
-
Bake in the preheated oven for 20-25 minutes, or until the rolls are golden brown and the filling is hot and bubbly. For extra crispiness, you can broil the rolls for the last 2-3 minutes.
-
-
Prepare the Dipping Sauce (optional):
-
While the rolls are baking, mix together ranch dressing and hot sauce (if using) in a small bowl. Adjust the amount of hot sauce to your preferred spice level.
-
-
Serve:
-
Let the rolls cool for a couple of minutes before serving. Serve with the optional dipping sauce on the side for added flavor.
-
Notes
-
If you prefer a milder version, you can omit the seeds from the jalapeños or use milder peppers like banana peppers.
-
These rolls can also be made ahead and stored in the fridge for a day or two before baking. Just brush with oil and bake when ready to serve.
-
You can add other ingredients like sautéed onions, bell peppers, or even black beans to the chicken filling for extra flavor and texture.
