These S’mores Bars are the perfect no-bake treat that captures all the flavors of the classic campfire snack in a sweet, chewy, and irresistible bar form! With layers of graham crackers, melted chocolate, and gooey marshmallows, these bars are a hit for summer parties or whenever you’re craving a s’mores-inspired dessert.
Ingredients
- 2 cups graham cracker crumbs (about 12 graham crackers, crushed)
- 1/4 cup granulated sugar
- 1/2 cup unsalted butter, melted
- 2 cups mini marshmallows (or large marshmallows cut into smaller pieces)
- 1 cup semi-sweet chocolate chips
- 1/2 cup milk chocolate chips
- 1/4 teaspoon vanilla extract (optional for extra flavor)

Prepare the pan: Line an 8×8-inch baking dish with parchment paper or lightly grease it for easy removal of the bars.

Make the crust: In a medium-sized bowl, combine the graham cracker crumbs and sugar. Stir in the melted butter and mix until the mixture is evenly coated and slightly crumbly.

Press the crust: Press the graham cracker mixture firmly into the bottom of the prepared baking dish. Use the back of a spoon or your fingers to compact the crust evenly into the dish. Place the pan in the refrigerator for about 10-15 minutes to set.

Melt the chocolate: In a microwave-safe bowl, combine the semi-sweet chocolate chips and milk chocolate chips. Microwave in 30-second intervals, stirring between each, until the chocolate is completely melted and smooth. You can also melt the chocolate in a heatproof bowl over a pot of simmering water (double boiler method).

Assemble the bars: Once the graham cracker crust has set, sprinkle the mini marshmallows evenly over the crust. Then, pour the melted chocolate over the marshmallows, spreading it out evenly to cover the top.

Set the bars: Allow the bars to cool to room temperature for about 30 minutes. Afterward, transfer the pan to the refrigerator to chill for at least 1 hour to set the bars and make them easier to slice.

Serve: Once the bars have chilled and firmed up, cut them into squares or bars. Serve and enjoy your delicious, gooey s’mores treat!
Notes
- You can add extra chocolate or marshmallows on top before chilling if you want an even gooier texture.
- If you prefer a richer chocolate flavor, try using dark chocolate chips in place of the milk chocolate.
