Description

These S’mores Brownie Cookies combine the rich, fudgy texture of brownies with the delicious flavors of a classic s’mores treat. Filled with chocolate chips, mini marshmallows, and graham cracker pieces, these cookies are the perfect indulgence!

Ingredients

Scale
  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 cup packed brown sugar
  • 2 large eggs
  • 2 tsp vanilla extract
  • 1 cup all-purpose flour
  • 1/2 cup unsweetened cocoa powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1 cup semisweet chocolate chips
  • 1 cup mini marshmallows
  • 1 cup graham cracker crumbs (or broken graham crackers)
  • 1/4 cup mini chocolate chips (optional, for garnish)

Instructions

  1. Preheat the Oven:
Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper or a silicone baking mat.
  2. Make the Cookie Dough:
In a large mixing bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy. Add the eggs, one at a time, mixing well after each addition. Stir in the vanilla extract.
  3. Combine Dry Ingredients:
In a separate bowl, whisk together the flour, cocoa powder, baking soda, and salt. Gradually add the dry ingredients to the wet ingredients, mixing until fully combined.
  4. Add the S’mores Ingredients:
Gently fold in the semisweet chocolate chips, mini marshmallows, and graham cracker crumbs until evenly distributed.
  5. Form the Cookies:
Using a cookie scoop or tablespoon, drop rounded spoonfuls of dough onto the prepared baking sheet, spacing them about 2 inches apart. If desired, top each cookie with a few extra mini chocolate chips.
  6. Bake:
Bake the cookies in the preheated oven for 10-12 minutes, or until the edges are set and the cookies appear slightly underbaked in the center (they will firm up as they cool).
  7. Cool and Serve:
Let the cookies cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely. Enjoy these chewy, fudgy s’mores cookies!

Notes

  • For an extra s’mores touch, you can add a few whole mini marshmallows on top of the cookies before baking.
  • If you like your cookies with a bit of extra crunch, you can add more graham cracker pieces to the dough.
  • Be sure not to overbake the cookies; they will continue to cook slightly once removed from the oven.
