Description
S’mores Cookie Bars feature layers of graham crackers, chocolate, and gooey marshmallows baked into soft cookie dough, creating a delicious treat perfect for any occasion without the need for a campfire.

For the Cookie Dough:
- 1/2 cup unsalted butter, softened
- 1/2 cup granulated sugar
- 1/2 cup brown sugar, packed
- 1 large egg
- 1 teaspoon vanilla extract
- 1 1/4 cups all-purpose flour
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1 cup graham cracker crumbs (about 7–8 graham crackers, crushed)
For the S’mores Layers:
- 1 1/2 cups semi-sweet chocolate chips (or chopped chocolate bars)
- 1 1/2 cups mini marshmallows
- 4–5 full graham cracker sheets, broken into small pieces
Instructions
- Preheat your oven to 350°F (175°C) and prepare an 8×8 or 9×9-inch baking pan.
- Cream together the softened butter, granulated sugar, and brown sugar until light and fluffy. Add the egg and vanilla extract, mixing well.
- In a separate bowl, whisk together the flour, baking soda, salt, and graham cracker crumbs. Gradually combine with the wet mixture.
- Press about 2/3 of the dough into the bottom of the prepared pan. Layer chocolate chips, mini marshmallows, and broken graham crackers on top. Drop spoonfuls of the remaining dough over the top.
- Bake for 22-25 minutes, until the top is golden brown and marshmallows are toasty.
- Cool for 15-20 minutes, then lift out using parchment overhang and slice into squares.
Notes
- Leftovers can be stored in an airtight container for up to 3 days at room temperature.
- For a gluten-free version, use gluten-free graham crackers and flour.
