Instructions

Make the Pancakes:
In a large mixing bowl, whisk together flour, cocoa powder, sugar, baking powder, baking soda, and salt.
In another bowl, whisk together buttermilk, egg, melted butter, and vanilla.
Pour the wet ingredients into the dry and stir until just combined. Fold in chocolate chips if using. -
Cook the Pancakes:
Heat a nonstick skillet or griddle over medium heat and add a little butter.
Pour about 1/4 cup of batter per pancake onto the skillet. Cook until bubbles form on the surface, then flip and cook until both sides are set and fluffy. Repeat with remaining batter. -
Assemble the S’mores Stack:
Stack pancakes on a plate and layer with mini marshmallows between each one if desired (they’ll melt slightly—yum!).
Drizzle chocolate syrup over the stack, sprinkle with crushed graham crackers, and top with extra marshmallows, whipped cream, or even a toasted marshmallow on top.
