  • 2 tablespoons olive oil

For the Creamed Spinach:

  • 1 cup mushrooms, sliced
  • 2 cloves garlic, minced
  • 2 cups fresh spinach
  • 1 cup heavy cream
  • ½ cup grated Parmesan cheese
  • ¼ teaspoon nutmeg
  • Additional Parmesan and fresh parsley, for garnish

Instructions

  • Season the Chicken:
    • Season chicken breasts with salt and pepper on both sides.
  • Cook the Chicken:
    • Heat olive oil in a large skillet over medium heat.
    • Add the chicken breasts and cook until golden brown and cooked through, about 6-7 minutes per side. Remove from the skillet and set aside.
  • Prepare the Creamed Spinach:
    • In the same skillet, add the sliced mushrooms and cook until they begin to soften, about 4 minutes.
    • Add the minced garlic and cook for an additional 1 minute.
    • Stir in the fresh spinach and cook until wilted, about 2 minutes.
  • Make the Sauce:
    • Lower the heat and add the heavy cream, grated Parmesan cheese, and nutmeg to the skillet. Stir and cook until the sauce thickens, about 5 minutes.
  • Combine and Finish:
    • Return the cooked chicken breasts to the skillet, spooning the creamy spinach sauce over the top.
    • Cook for an additional 2-3 minutes until everything is heated through.
  • Garnish and Serve:
    • Garnish with extra Parmesan cheese and chopped fresh parsley before serving.

Notes

  • You can substitute chicken thighs for breasts if preferred.
  • Frozen spinach can be used, but make sure to drain it well before adding it to the sauce.
