Ingredients

Scale

Chocolate Layer:

  • 1 cup milk chocolate chips
  • ¼ cup butterscotch chips
  • ¼ cup peanut butter

Marshmallow Layer:

  • 4 tablespoons butter
  • 1 cup sugar
  • ¼ cup evaporated milk
  • 1 ½ cups marshmallow crème
  • ¼ cup peanut butter
  • 1 teaspoon vanilla extract
  • 1 ½ cups salted peanuts, chopped

Caramel Layer:

  • 14 ounces caramel cubes
  • ¼ cup heavy cream

Instructions

Step 1: Make the First Chocolate Layer

  1. Melt the Chocolate:
In a microwave-safe bowl or over a double boiler, melt the milk chocolate chips, butterscotch chips, and peanut butter together. Stir until the mixture is smooth and creamy.
  2. Spread in Pan:
Spread the melted chocolate mixture evenly in a greased 9×13-inch baking pan.
  3. Chill:
Place the pan in the refrigerator and chill until the first chocolate layer sets, about 30 minutes.

Step 2: Prepare the Marshmallow Layer

  1. Melt the Butter:
In a saucepan over medium heat, melt the butter.
  2. Add Sugar and Evaporated Milk:
Stir in the sugar and evaporated milk, and cook until the sugar dissolves.
  3. Boil:
Bring the mixture to a gentle boil for about 3 minutes, then remove from heat.
  4. Mix the Ingredients:
Stir in the marshmallow crème, peanut butter, vanilla extract, and chopped peanuts. Mix until smooth.
  5. Pour Over Chocolate Layer:
Pour the marshmallow mixture evenly over the chilled chocolate layer. Return the pan to the refrigerator and chill until the marshmallow layer is set, about 30 minutes.

Step 3: Create the Caramel Layer

  1. Melt the Caramel:
In a microwave-safe bowl or saucepan, melt the caramel cubes and heavy cream together. Stir until smooth and creamy.
  2. Pour Over Marshmallow Layer:
Pour the caramel layer evenly over the set marshmallow layer. Return the pan to the refrigerator and chill until firm, about 30 minutes.

Step 4: Add the Final Chocolate Layer

  1. Melt the Chocolate:
Repeat the process for the first chocolate layer: melt the milk chocolate chips, butterscotch chips, and peanut butter until smooth.
  2. Spread Over Caramel Layer:
Spread the melted chocolate evenly over the caramel layer.
  3. Chill:
Chill in the refrigerator until the entire dessert is firm, about 2-3 hours.

Notes

  • Layering tip: Be sure to let each layer set before adding the next one to keep the layers distinct and prevent mixing.
  • Storage: Store in an airtight container in the refrigerator for up to a week. You can also freeze the fudge for longer storage.
  • Variation: Add more chopped peanuts or drizzle extra caramel on top for a sweeter finish.
  • Serving suggestion: Cut the fudge into small squares as it’s quite rich and filling.
