Description
Soft and Chewy Scotcharoos are a classic no-bake dessert made with crispy rice cereal, peanut butter, and a sweet chocolate-butterscotch topping. These bars are gooey, rich, and totally irresistible.

- 6 cups crispy rice cereal
- 1 cup light corn syrup
- 1 cup granulated sugar
- 1 cup creamy peanut butter
- 1 cup semi-sweet chocolate chips
- 1 cup butterscotch chips
Instructions
- Lightly grease a 9×13-inch baking dish or line it with parchment paper.
- In a large saucepan over medium heat, combine the corn syrup and sugar. Stir continuously until the mixture just begins to bubble (do not let it boil).
- Remove from heat and stir in the peanut butter until smooth.
- Immediately add the crispy rice cereal and stir until fully coated.
- Press the mixture into the prepared baking dish in an even layer.
- In a microwave-safe bowl, combine the chocolate chips and butterscotch chips. Microwave in 30-second intervals, stirring between each, until completely melted and smooth.
- Spread the chocolate-butterscotch mixture evenly over the cereal base.
- Let cool at room temperature until the topping is set, about 1 hour. For quicker setting, refrigerate for 30 minutes.
- Cut into squares and serve.
Notes
- Do not let the sugar mixture boil — boiling causes the bars to become hard.
- Store in an airtight container at room temperature for up to 5 days.
- You can add a sprinkle of sea salt on top before the chocolate sets for a sweet-salty twist.
