Description

Soft and Chewy Scotcharoos are a classic no-bake dessert made with crispy rice cereal, peanut butter, and a sweet chocolate-butterscotch topping. These bars are gooey, rich, and totally irresistible.


Ingredients

  • 6 cups crispy rice cereal
  • 1 cup light corn syrup
  • 1 cup granulated sugar
  • 1 cup creamy peanut butter
  • 1 cup semi-sweet chocolate chips
  • 1 cup butterscotch chips

Instructions

  1. Lightly grease a 9×13-inch baking dish or line it with parchment paper.
  2. In a large saucepan over medium heat, combine the corn syrup and sugar. Stir continuously until the mixture just begins to bubble (do not let it boil).
  3. Remove from heat and stir in the peanut butter until smooth.
  4. Immediately add the crispy rice cereal and stir until fully coated.
  5. Press the mixture into the prepared baking dish in an even layer.
  6. In a microwave-safe bowl, combine the chocolate chips and butterscotch chips. Microwave in 30-second intervals, stirring between each, until completely melted and smooth.
  7. Spread the chocolate-butterscotch mixture evenly over the cereal base.
  8. Let cool at room temperature until the topping is set, about 1 hour. For quicker setting, refrigerate for 30 minutes.
  9. Cut into squares and serve.

Notes

  • Do not let the sugar mixture boil — boiling causes the bars to become hard.
  • Store in an airtight container at room temperature for up to 5 days.
  • You can add a sprinkle of sea salt on top before the chocolate sets for a sweet-salty twist.
