  • 1 tbsp baking powder
  • 2 large eggs
  • 1/2 cup milk
  • 1 tsp vanilla extract
  • 2 tbsp unsalted butter, melted
  • Vegetable oil (for frying)

  • 1 cup powdered sugar
  • 2 tbsp milk (more if needed for consistency)
  • 1/2 tsp vanilla extract
  • A pinch of salt (optional)

Instructions

  1. Prepare the Fritters:
    • In a medium bowl, combine the flour, granulated sugar, ground cinnamon, salt, and baking powder. Stir until well mixed.
    • In a separate bowl, whisk together the eggs, milk, vanilla extract, and melted butter.
    • Add the wet ingredients to the dry ingredients and stir until combined. The batter should be thick.
    • Gently fold in the chopped apples.
  2. Fry the Fritters:
    • Heat about 2-3 inches of vegetable oil in a large, deep skillet or pot over medium heat until it reaches 350°F (175°C). Use a thermometer to ensure the oil is at the right temperature for frying.
    • Carefully drop spoonfuls of the fritter batter into the hot oil, making sure not to overcrowd the pan. Fry in batches if necessary.
    • Cook the fritters for about 3-4 minutes on each side or until golden brown and cooked through. Use a slotted spoon to remove the fritters from the oil and place them on a paper towel-lined plate to drain excess oil.
  3. Make the Vanilla Glaze:
    • While the fritters are cooling, whisk together the powdered sugar, milk, vanilla extract, and a pinch of salt (if using) in a small bowl. Add more milk if necessary to achieve a smooth, pourable consistency.
  4. Glaze the Fritters:
    • Once the fritters are slightly cooled but still warm, drizzle them generously with the vanilla glaze. You can dip the fritters into the glaze for a thicker coating or drizzle over the top for a lighter touch.
