Description

These soft and colorful Funfetti cookies are perfect for adding a touch of joy to any occasion. Easy to make and wonderfully chewy!


Ingredients

Scale
  • 3 cups unbleached all-purpose flour
  • 2 tsp baking powder
  • 1 ΒΌ cups granulated sugar
  • 1 cup salted butter (cold, cut into chunks)
  • 1 large egg
  • 1 tsp pure vanilla extract
  • 1 tsp pure almond extract
  • Colorful candy sprinkles

Instructions

  • Preheat Oven: Set to 350Β°F (175Β°C). Line baking sheets with parchment paper.
  • Mix Dry Ingredients: In a bowl, whisk together flour and baking powder. Set aside.
  • Cream Butter & Sugar: In a stand mixer with the paddle attachment, beat sugar and butter until light and fluffy (about 2 minutes). Add egg and extracts, mixing until combined.
  • Add Flour: On low speed, gradually add flour mixture in 2 batches, mixing just until combined. Scrape down the sides as needed.
  • Add Sprinkles: Gently fold in some sprinkles. Form dough into a smooth ball, wrap in cling wrap, and chill for at least 30 minutes.
  • Shape Cookies: Roll dough into heaping 1 tbsp balls. Flatten each ball into a thick disc. Top with additional sprinkles if desired.
  • Bake: Bake for 9-10 minutes until puffy and golden. Cool completely on a wire rack.
  • Store: Keep in an airtight container for up to 5 days.
