These soft and colorful Funfetti cookies are perfect for adding a touch of joy to any occasion. Easy to make and wonderfully chewy!

- 3 cups unbleached all-purpose flour
- 2 tsp baking powder
- 1 ΒΌ cups granulated sugar
- 1 cup salted butter (cold, cut into chunks)
- 1 large egg
- 1 tsp pure vanilla extract
- 1 tsp pure almond extract
- Colorful candy sprinkles
Instructions
- Preheat Oven: Set to 350Β°F (175Β°C). Line baking sheets with parchment paper.
- Mix Dry Ingredients: In a bowl, whisk together flour and baking powder. Set aside.
- Cream Butter & Sugar: In a stand mixer with the paddle attachment, beat sugar and butter until light and fluffy (about 2 minutes). Add egg and extracts, mixing until combined.
- Add Flour: On low speed, gradually add flour mixture in 2 batches, mixing just until combined. Scrape down the sides as needed.
- Add Sprinkles: Gently fold in some sprinkles. Form dough into a smooth ball, wrap in cling wrap, and chill for at least 30 minutes.
- Shape Cookies: Roll dough into heaping 1 tbsp balls. Flatten each ball into a thick disc. Top with additional sprinkles if desired.
- Bake: Bake for 9-10 minutes until puffy and golden. Cool completely on a wire rack.
- Store: Keep in an airtight container for up to 5 days.
Notes
- For best results, chill the dough for at least 30 minutes to help maintain the cookie shape.
- Adjust the amount of sprinkles to your preference for a more colorful cookie.
