Instructions

  1. In a large bowl, whisk together flour, baking powder, salt, and granulated sugar.
  2. Make a well in the center of the dry ingredients and pour in the vegetable oil and warm water. Add vanilla extract if using.
  3. Mix the ingredients together until a dough forms. Knead the dough on a lightly floured surface for 2-3 minutes until smooth and elastic.
  4. Divide the dough into 12 equal pieces and roll each piece into a ball. Flatten each ball into a disc shape about 1/2 inch thick.
  5. Heat about 2 inches of vegetable oil in a large, deep skillet over medium-high heat. The oil is ready when a small piece of dough dropped into the oil bubbles and rises to the surface.
  6. Carefully drop the dough discs into the hot oil, cooking in batches if necessary. Fry for 2-3 minutes per side, or until golden brown and puffed up. Use tongs to flip the sopapillas as they cook.
  7. Remove the sopapillas from the oil and drain on paper towels to remove excess oil.
  8. While still warm, drizzle with honey, dust with cinnamon sugar, or sprinkle with powdered sugar. Serve immediately for the best taste and texture!
