  • 1 avocado, diced
  • 1/2 cup salsa

Egg Bowls:

  • 8 whole eggs
  • 16 oz tub cottage cheese
  • 2 cups shredded Gruyère cheese (or sharp cheddar)
  • 2 tablespoons cornstarch
  • 23 teaspoons hot sauce
  • 1/4 teaspoon salt
  • 1/4 teaspoon freshly ground pepper
  • Nonstick spray

Instructions

  • Preheat oven: Preheat oven to 300°F (150°C).
  • Prepare bowls: Spray 4 (2-cup) glass oven-safe containers with nonstick spray.
  • Make egg mixture: Combine eggs, cottage cheese, 1 cup of Gruyère cheese, cornstarch, hot sauce, salt, and pepper in a blender. Blend until smooth.
  • Divide mixture: Divide the egg mixture evenly among the prepared bowls.
  • Top with cheese: Sprinkle the remaining Gruyère cheese over the egg mixture.
  • Bake: Create a water bath by placing the bowls in a larger baking pan. Pour hot water into the pan to come halfway up the sides of the bowls.
  • Bake: Bake for 30-35 minutes or until soufflés are set and golden brown.
