Instructions

  1. Prepare the potatoes:
    Preheat your oven to 400°F (200°C). Wash the potatoes and cut them into bite-sized pieces (about 1-inch chunks). You can leave the skins on for extra texture and flavor.

  2. Season the potatoes:
    In a large bowl, toss the cut potatoes with olive oil, garlic powder, onion powder, dried dill (optional), paprika, salt, and pepper. Ensure the potatoes are well-coated with the seasoning mixture.

  3. Roast the potatoes:
    Spread the seasoned potatoes out in a single layer on a baking sheet, making sure they’re not crowded. This will help them crisp up better. Roast for 30-35 minutes, flipping the potatoes halfway through the cooking time, until they are golden brown and crispy on the edges.

  4. Make the sour cream sauce:
    While the potatoes are roasting, in a small bowl, mix the sour cream with a pinch of salt and pepper. If you want to add extra tang or flavor, you can stir in a little more onion powder or fresh chives.

  5. Finish and serve:
    Once the potatoes are crispy and golden, remove them from the oven. Immediately drizzle the sour cream sauce over the potatoes, and then garnish with freshly chopped chives and Parmesan cheese (if using). Serve warm and enjoy!
