Southern Breakfast Enchiladas with Sausage Gravy are a mouthwatering twist on classic comfort food. These hearty enchiladas are filled with scrambled eggs, cheddar cheese, and breakfast sausage, then smothered in creamy, peppery sausage gravy. - 6 large flour tortillas
- 6 large eggs
- 1 tablespoon butter
- 1 cup shredded cheddar cheese
- 1/2 cup shredded Monterey Jack cheese
- 1/2 lb breakfast sausage
- For the Sausage Gravy:
- 1/2 lb breakfast sausage
- 1/4 cup all-purpose flour
- 2 1/2 cups whole milk
- 1/2 teaspoon black pepper (more to taste)
- Salt to taste
Instructions
- Preheat oven to 350°F (175°C). Grease a 9×13-inch baking dish.
- In a skillet, cook 1/2 lb sausage until browned. Remove and set aside. Wipe skillet clean if needed.
- In the same skillet, melt butter. Scramble eggs until just set (they’ll cook more in the oven). Remove from heat.
- Mix eggs, cooked sausage, and both cheeses in a bowl.
- Spoon filling into tortillas, roll them up, and place seam-side down in the baking dish.
- To make the gravy: In a clean skillet, cook the remaining 1/2 lb sausage until browned. Sprinkle in flour and stir to coat the sausage. Cook for 1–2 minutes.
- Gradually add milk while whisking. Cook, stirring constantly, until thickened (5–7 minutes). Add black pepper and salt to taste.
- Pour gravy over enchiladas. Cover with foil and bake for 20 minutes. Remove foil and bake 10 more minutes, until bubbly.
- Let cool slightly and serve warm, garnished with chopped chives or parsley if desired.
Notes
- Make it spicy by adding diced jalapeños to the egg mixture or a dash of cayenne to the gravy.
- Use maple or spicy sausage for added flavor variety.
- Can be prepped the night before and baked in the morning.
- Leftovers keep well in the fridge for 3 days and reheat nicely.
