- 1/2 cup unsalted butter, cold and cubed
- 1 1/2 cups sharp cheddar cheese, shredded
- 4 tbsp ice water (more if needed)
Instructions
- Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
- In a large bowl, whisk together flour, salt, and cayenne pepper if using.
- Using a pastry cutter or fingers, cut in the cold butter until mixture resembles coarse crumbs.
- Stir in shredded cheddar cheese.
- Add ice water one tablespoon at a time, mixing gently until dough just comes together.
- Turn dough onto a floured surface and roll out to about 1/8 inch thickness.
- Cut into desired shapes (squares, rectangles, or circles) using a knife or cookie cutter.
- Place crackers on prepared baking sheet, prick each with a fork to prevent puffing.
- Bake for 15-20 minutes or until edges are golden and crackers are crisp.
- Cool completely on a wire rack before serving.
