Ingredients

  • 2 cups all-purpose flour
  • 1/2 tsp salt
  • 1/4 tsp cayenne pepper (optional)
  • 1/2 cup unsalted butter, cold and cubed
  • 1 1/2 cups sharp cheddar cheese, shredded
  • 4 tbsp ice water (more if needed)

Instructions

  1. Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. In a large bowl, whisk together flour, salt, and cayenne pepper if using.
  3. Using a pastry cutter or fingers, cut in the cold butter until mixture resembles coarse crumbs.
  4. Stir in shredded cheddar cheese.
  5. Add ice water one tablespoon at a time, mixing gently until dough just comes together.
  6. Turn dough onto a floured surface and roll out to about 1/8 inch thickness.
  7. Cut into desired shapes (squares, rectangles, or circles) using a knife or cookie cutter.
  8. Place crackers on prepared baking sheet, prick each with a fork to prevent puffing.
  9. Bake for 15-20 minutes or until edges are golden and crackers are crisp.
  10. Cool completely on a wire rack before serving.
