Description

Southern Coca-Cola Cake is a nostalgic and decadent dessert with a soft, moist texture, thanks to the addition of Coca-Cola in both the cake and frosting. This cake has a rich, sweet flavor with a slight tang from the soda, making it the ultimate Southern treat for any occasion. Topped with a gooey, caramel-like frosting, it’s a crowd-pleaser you won’t want to miss!

Ingredients

Scale

For the Cake:

  • 2 cups all-purpose flour
  • 2 cups granulated sugar
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1/2 cup buttermilk
  • 1/2 cup Coca-Cola
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/4 cup vegetable oil

For the Frosting:

  • 1/2 cup unsalted butter
  • 1/4 cup Coca-Cola
  • 1/4 cup heavy cream
  • 4 cups powdered sugar
  • 1 teaspoon vanilla extract
  • 1 cup chopped pecans (optional, for garnish)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour a 9×13-inch baking dish.
  2. In a large mixing bowl, combine the flour, sugar, baking soda, and salt.
  3. In a separate bowl, whisk together the buttermilk, Coca-Cola, eggs, vanilla extract, melted butter, and vegetable oil.
  4. Gradually pour the wet ingredients into the dry ingredients, mixing until just combined. Be careful not to overmix.
  5. Pour the batter into the prepared baking dish and smooth the top.
  6. Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
  7. While the cake is baking, prepare the frosting. In a saucepan, melt the butter over medium heat. Add the Coca-Cola and heavy cream, stirring until it begins to simmer.
  8. Stir in the powdered sugar and vanilla extract, and continue to cook for 2-3 minutes until the frosting is smooth and thickened slightly.
  9. Once the cake is finished baking, remove it from the oven and immediately pour the hot frosting over the warm cake.
  10. Garnish with chopped pecans (if using). Let the cake cool slightly before slicing and serving.

Notes

  • For a lighter cake, you can substitute the buttermilk with regular milk, but the texture may be slightly different.
  • You can add extra chocolate chips or cocoa powder to the batter for a deeper chocolate flavor.
  • This cake can be made ahead and stored in the fridge for up to 3 days. Serve at room temperature for the best taste.
  • If you prefer a thicker frosting, add a bit more powdered sugar until the desired consistency is reached.
