Topped with a gooey, caramel-like frosting, it’s a crowd-pleaser you won’t want to miss!
Ingredients
Scale
For the Cake:
- 2 cups all-purpose flour
- 2 cups granulated sugar
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1/2 cup unsalted butter, softened
- 1/2 cup buttermilk
- 1/2 cup Coca-Cola
- 2 large eggs
- 1 teaspoon vanilla extract
- 1/4 cup vegetable oil
For the Frosting:
- 1/2 cup unsalted butter
- 1/4 cup Coca-Cola
- 1/4 cup heavy cream
- 4 cups powdered sugar
- 1 teaspoon vanilla extract
- 1 cup chopped pecans (optional, for garnish)
Instructions
- Preheat your oven to 350°F (175°C). Grease and flour a 9×13-inch baking dish.
- In a large mixing bowl, combine the flour, sugar, baking soda, and salt.
- In a separate bowl, whisk together the buttermilk, Coca-Cola, eggs, vanilla extract, melted butter, and vegetable oil.
- Gradually pour the wet ingredients into the dry ingredients, mixing until just combined. Be careful not to overmix.
- Pour the batter into the prepared baking dish and smooth the top.
- Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
- While the cake is baking, prepare the frosting. In a saucepan, melt the butter over medium heat. Add the Coca-Cola and heavy cream, stirring until it begins to simmer.
- Stir in the powdered sugar and vanilla extract, and continue to cook for 2-3 minutes until the frosting is smooth and thickened slightly.
- Once the cake is finished baking, remove it from the oven and immediately pour the hot frosting over the warm cake.
- Garnish with chopped pecans (if using). Let the cake cool slightly before slicing and serving.
Notes
- For a lighter cake, you can substitute the buttermilk with regular milk, but the texture may be slightly different.
- You can add extra chocolate chips or cocoa powder to the batter for a deeper chocolate flavor.
- This cake can be made ahead and stored in the fridge for up to 3 days. Serve at room temperature for the best taste.
- If you prefer a thicker frosting, add a bit more powdered sugar until the desired consistency is reached.
