Description

  • 2 cans (14.75 oz each) pink salmon, drained and flaked
  • 1/2 cup breadcrumbs (preferably panko or seasoned)
  • 2 large eggs, beaten
  • 1/4 cup mayonnaise
  • 1 tablespoon Dijon mustard (optional for a slight tang)
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon dried thyme
  • 1/4 teaspoon cayenne pepper (optional for a bit of heat)
  • 1 tablespoon fresh parsley, chopped (optional)
  • Salt and pepper to taste
  • 23 tablespoons vegetable oil (for frying)

Instructions

  1. Prepare the Salmon Mixture:
    In a large bowl, flake the canned salmon with a fork, making sure to remove any bones or skin. Add the breadcrumbs, beaten eggs, mayonnaise, Dijon mustard (if using), garlic powder, onion powder, thyme, cayenne pepper (if using), and chopped parsley. Season with salt and pepper to taste.
  2. Form the Patties:
    Mix all the ingredients together until well combined. Shape the mixture into patties, about 2-3 inches in diameter. You should get about 8-10 patties, depending on the size.
  3. Fry the Patties:
    Heat 2-3 tablespoons of vegetable oil in a large skillet over medium heat. Once the oil is hot, carefully place the patties in the skillet, making sure they don’t overlap. Fry the patties for 3-4 minutes per side, or until golden brown and crispy. You may need to fry them in batches.
  4. Drain and Serve:
    Once fried, transfer the patties to a paper towel-lined plate to drain any excess oil. Serve hot with tartar sauce, lemon wedges, or your favorite dipping sauce.

Notes

  • For added flavor, you can mix in a teaspoon of hot sauce or a dash of lemon juice to the salmon mixture.
  • If you don’t have fresh parsley, dried parsley or green onions can also be used.
