Description

This classic Southern Pineapple Casserole combines the sweet tang of pineapple with a buttery, cheesy topping for a unique and delicious side dish or dessert. It’s a comfort food favorite that’s perfect for holiday gatherings, potlucks, or any occasion that calls for something sweet and savory.

Ingredients

Scale
  • 2 cans (20 oz each) crushed pineapple, drained
  • 1 cup granulated sugar
  • 1/2 cup all-purpose flour
  • 1/2 tsp salt
  • 2 large eggs, beaten
  • 1 cup shredded sharp cheddar cheese
  • 1/2 cup unsalted butter, melted
  • 1 cup crushed buttery crackers (like Ritz or saltines)
  • 1/4 cup unsalted butter (for topping)

Instructions

  1. Prepare the Oven & Baking Dish: Preheat the oven to 350°F (175°C). Grease a 9×13-inch baking dish with butter or non-stick spray.
  2. Combine the Ingredients: In a large mixing bowl, stir together the drained pineapple, sugar, flour, salt, and beaten eggs. Mix well.
  3. Add Cheese & Butter: Stir in the shredded cheddar cheese and melted butter until fully combined.
  4. Pour into Baking Dish: Pour the mixture into the prepared baking dish and spread it out evenly.
  5. Prepare the Topping: In a small bowl, combine the crushed crackers with the remaining 1/4 cup of melted butter. Stir until the crackers are evenly coated with butter. Sprinkle this mixture evenly over the top of the casserole.
  6. Bake: Bake the casserole for 35-40 minutes, or until the top is golden brown and the casserole is bubbly.
  7. Serve & Enjoy: Allow the casserole to cool slightly before serving. It’s delicious warm or at room temperature.

Notes

  • For a different twist, you can use pineapple chunks instead of crushed pineapple.
  • You can add a bit of cinnamon or nutmeg for extra warmth and flavor.
  • This casserole can be made ahead of time and refrigerated before baking. Just allow extra time to bake if it’s cold from the fridge.
  • If you prefer a sweeter version, increase the sugar by 1/4 cup.
