Description

  • 1 can (14.5 oz) diced tomatoes
  • 1 can (6 oz) tomato paste
  • 1 1/2 cups beef broth
  • 2 tbsp chili powder
  • 1 tsp ground cumin
  • 1 tsp smoked paprika
  • 1/2 tsp cayenne pepper (optional, for heat)
  • Salt and black pepper to taste
  • 1 tsp brown sugar (optional, to balance acidity)

Instructions

  1. Heat olive oil in a large pot or Dutch oven over medium heat. Add the diced onion and bell pepper. Cook until softened, about 5 minutes.
  2. Add the minced garlic and cook for another minute until fragrant.
  3. Add the ground beef and cook until browned, breaking it up as it cooks. Drain excess fat if necessary.
  4. Stir in the chili powder, cumin, smoked paprika, cayenne (if using), salt, pepper, and brown sugar. Cook for 1–2 minutes to toast the spices.
  5. Add the tomato paste, diced tomatoes, beans, and beef broth. Stir to combine.
  6. Bring to a simmer, then reduce the heat to low. Cover and simmer for 30–45 minutes, stirring occasionally, until thickened and flavorful.
  7. Adjust seasoning to taste. Serve hot with cornbread, rice, or your favorite toppings like sour cream, shredded cheese, and green onions.

Notes

  • For added depth, stir in a splash of apple cider vinegar or hot sauce at the end of cooking.
  • Leftovers taste even better the next day and can be frozen for up to 3 months.
