  • 6 cups fresh or frozen peaches, peeled and sliced
  • 1 tablespoon lemon juice

  • 2 tablespoons cold butter, cut into small pieces

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, combine the sliced peaches, lemon juice, granulated sugar, cornstarch, cinnamon, nutmeg, and vanilla extract. Stir gently to coat the peaches evenly.
  3. Pour the peach mixture into a greased 9×13-inch baking dish, spreading it out evenly.
  4. In a separate bowl, whisk together the flour, sugar, baking powder, salt, and cinnamon for the biscuit topping.
  5. Add the cold butter cubes to the dry ingredients and use a pastry cutter or your fingers to work the butter into the flour until the mixture resembles coarse crumbs.
  6. Slowly add the milk to the dry ingredients, stirring just until combined to form a thick batter.
  7. Spoon the biscuit batter over the peach filling, spreading it out gently with a spatula. The topping doesn’t need to completely cover the peaches; it will spread while baking.
  8. For the crumble (optional), combine the sugar, flour, and cold butter in a small bowl. Use a fork or pastry cutter to work the butter into the dry ingredients until it forms small crumbs. Sprinkle the crumble over the biscuit topping.
  9. Bake the cobbler for 45-50 minutes, or until the biscuit topping is golden brown and the peach filling is bubbling around the edges.
  10. Allow the cobbler to cool slightly before serving. Serve warm with vanilla ice cream or whipped cream, if desired.
