- 12 oz spaghetti
- 1/2 pound raw shrimp, peeled and deveined
- 4 oz Spanish chorizo, sliced or diced
- 1 tablespoon olive oil
- 1 tablespoon butter
- 1 red bell pepper, thinly sliced
- 1 yellow bell pepper, thinly sliced
- 3 cloves garlic, minced
- 1/2 cup heavy cream
- 1/4 cup grated Parmesan cheese
- 1/4 teaspoon smoked paprika
- Salt and black pepper to taste
- Fresh parsley, chopped (for garnish)
Instructions
- Cook the spaghetti according to package directions. Drain and set aside, reserving 1/2 cup of pasta water.
- In a large skillet, heat olive oil and butter over medium heat. Add the chorizo and cook for 3–4 minutes until it starts to crisp.
- Add the shrimp to the skillet and cook until pink and opaque, about 2–3 minutes per side. Remove shrimp and chorizo from the skillet and set aside.
- In the same skillet, add the sliced bell peppers and cook until soft, about 4–5 minutes. Add garlic and cook for another 30 seconds.
- Reduce heat to low, stir in the cream, Parmesan cheese, and smoked paprika. Stir until the sauce is smooth and slightly thickened. Add salt and pepper to taste.
- Return shrimp and chorizo to the skillet. Add the cooked spaghetti and toss everything together, adding a bit of reserved pasta water as needed to loosen the sauce.
- Garnish with chopped parsley and serve hot.
Notes
- You can use sweet or hot chorizo depending on your spice preference.
- Substitute penne or linguine if spaghetti isn’t available.
- Add a squeeze of lemon juice just before serving to brighten the flavors.
