  • For the Mussels:
    • 8 ounces chorizo sausage or turkey sausage, chopped into 1/2-inch pieces
    • 3 tablespoons unsalted butter
    • 1 yellow onion, finely chopped
    • 1/2 teaspoon Spanish smoked paprika
    • 1/4 teaspoon crushed red pepper flakes
    • 1/2 teaspoon freshly ground black pepper
    • 3 garlic cloves, minced
    • 4 tomatoes, seeded and chopped
    • 3/4 cup white wine
    • 1/2 cup heavy cream
    • 2 tablespoons finely chopped fresh parsley leaves
    • 1 pound fresh mussels, scrubbed
  • For Serving:
    • French bread

Instructions

  • Cook Sausage: In a large sauté pan, cook sausage over medium-high heat until brown, about 6 minutes. Remove and drain on paper towels.
  • Sauté Vegetables: In the same pan, melt butter and add onion, paprika, red pepper flakes, and black pepper. Cook until onions are tender, about 4 minutes. Add garlic and tomatoes; cook for 2 minutes.
  • Add Sauce and Mussels: Stir in white wine, heavy cream, parsley, and the cooked sausage. Add mussels and bring to a boil.
  • Simmer: Reduce heat, cover, and cook until mussel shells have opened, about 6-8 minutes.
  • Serve: Serve mussels with sausage and sauce in bowls. Discard any unopened shells. Enjoy with French bread.

  • Make sure to scrub the mussels well to remove any sand or grit.
  • You can substitute the chorizo with a milder sausage if preferred.
