- 1/2 teaspoon freshly ground black pepper
- 3 garlic cloves, minced
- 4 tomatoes, seeded and chopped
- 3/4 cup white wine
- 1/2 cup heavy cream
- 2 tablespoons finely chopped fresh parsley leaves
- 1 pound fresh mussels, scrubbed
- For Serving:
- French bread

- Cook Sausage: In a large sauté pan, cook sausage over medium-high heat until brown, about 6 minutes. Remove and drain on paper towels.
- Sauté Vegetables: In the same pan, melt butter and add onion, paprika, red pepper flakes, and black pepper. Cook until onions are tender, about 4 minutes. Add garlic and tomatoes; cook for 2 minutes.
- Add Sauce and Mussels: Stir in white wine, heavy cream, parsley, and the cooked sausage. Add mussels and bring to a boil.
- Simmer: Reduce heat, cover, and cook until mussel shells have opened, about 6-8 minutes.
- Serve: Serve mussels with sausage and sauce in bowls. Discard any unopened shells. Enjoy with French bread.
