Ingredients

  • 1 large flour tortilla

  • 2 large eggs

  • 1/4 cup shredded cheddar or pepper jack cheese

  • 1 tbsp milk or cream (for fluffier eggs)

  • 1/4 avocado, sliced or mashed

  • 1 tbsp chili crisp (adjust to taste)

  • Salt and black pepper, to taste

  • 1 tsp butter or oil (for scrambling)

  • Optional add-ins: baby spinach, chopped scallions, cooked bacon or sausage


Instructions

  • Scramble the eggs: In a small bowl, whisk the eggs with milk, salt, and pepper. Heat butter or oil in a nonstick skillet over medium heat. Add the eggs and cook, stirring gently, until just set. Remove from heat.

  • Assemble the wrap: Lay the tortilla on a flat surface. Spread the scrambled eggs in the center, followed by cheese, avocado, and chili crisp. Add any extras you like (spinach, bacon, etc.).

  • Fold it up: Fold the sides of the tortilla over the filling, then roll it up from the bottom into a tight wrap.

  • Toast the wrap (optional but recommended): Wipe out the skillet and place the wrap seam-side down over medium heat. Toast for 1–2 minutes per side until golden and crispy.

  • Serve: Slice in half and enjoy hot!

Notes

  • Use store-bought or homemade chili crisp (Lao Gan Ma, Momofuku, or Fly By Jing are great options).

  • Want more heat? Add a dash of sriracha or chopped fresh chili.
