For the Spiced Salmon:

  • 4 salmon fillets
  • 1 tablespoon olive oil
  • 1 teaspoon paprika
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • ¼ teaspoon cumin
  • ¼ teaspoon chili powder
  • Salt and pepper, to taste

For the Cheesy Asparagus:

  • 1 bunch asparagus, trimmed
  • 1 tablespoon olive oil
  • ½ teaspoon garlic powder
  • ¼ teaspoon salt
  • ¼ teaspoon black pepper
  • ½ cup shredded mozzarella cheese

For the Garlic Herb Potatoes:

  • 1 ½ pounds baby potatoes, halved
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon dried rosemary
  • ½ teaspoon dried thyme
  • Salt and pepper, to taste

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Prepare the Potatoes: In a large bowl, toss the halved baby potatoes with olive oil, garlic powder, rosemary, thyme, salt, and pepper. Spread the potatoes in a single layer on a baking sheet.
  3. Prepare the Salmon: Rub the salmon fillets with olive oil and sprinkle with paprika, garlic powder, onion powder, cumin, chili powder, salt, and pepper. Place the salmon fillets on the same baking sheet as the potatoes (or a separate one if needed).
  4. Bake the potatoes and salmon in the preheated oven for 15-20 minutes, or until the salmon is cooked through and flakes easily with a fork, and the potatoes are golden and tender.
  5. Prepare the Asparagus: While the salmon and potatoes are baking, toss the trimmed asparagus with olive oil, garlic powder, salt, and pepper. After the first 15 minutes of baking, add the asparagus to the baking sheet and sprinkle with mozzarella cheese. Continue baking for an additional 10 minutes, or until the cheese is melted and the asparagus is tender.
  6. Once everything is done, remove from the oven and serve immediately.

Notes

  • You can substitute the mozzarella cheese with parmesan for a different flavor.
  • If you prefer crispy potatoes, bake them for an additional 5-10 minutes.
  • To make this recipe even more flavorful, squeeze fresh lemon juice over the salmon and asparagus before serving.
