For the Quesadillas:

  • 4 large flour tortillas
  • 2 cups shredded cheese
  • 1/4 cup fresh cilantro (optional)

For Serving:

  • Salsa
  • Sour cream
  • Guacamole

Instructions

  • Cook beef: In a skillet, heat olive oil. Add onion, garlic, and ground beef. Cook until browned. Drain excess fat. Season with taco seasoning, red pepper flakes, salt, and pepper.
  • Assemble quesadillas: Lay a tortilla in a skillet. Sprinkle with cheese, beef mixture, and cilantro (if using). Fold the tortilla over.
  • Cook quesadillas: Cook for 3-4 minutes per side, or until golden brown and cheese is melted.
