For the Chicken Topping:

  • 1 chicken breast, chopped into bite-sized pieces

  • Freshly ground black pepper
  • 1 tablespoon olive oil

For Assembling the Pizza:

  • 1 cup pickled jalapenos
  • 1 cup cubed mozzarella cheese
  • Optional garnishes: chopped cilantro, Crema, additional pickled jalapenos

Instructions

  • Prepare the Dough: In a mixing bowl, combine yeast and warm water. Stir to dissolve. Add flour and salt, mixing until a dough forms. Knead until smooth, cover, and let rise for 1-2 hours.
  • Prepare Garlic-Infused Oil: Mix olive oil, minced garlic, and a pinch of salt in a small bowl, mashing the garlic into the oil.
  • Season and Cook the Chicken: Toss chopped chicken with chile powder, chipotle powder, salt, pepper, and olive oil. Sauté over medium-high heat until cooked through. Set aside.
  • Assemble and Bake the Pizza: Preheat oven to 400°F (200°C). Roll out dough into two thin 10″ pizzas. Pre-bake for 1-2 minutes if desired. Spread garlic oil on crusts, top with chicken, mozzarella, and pickled jalapenos.
  • Bake: Bake for 8-10 minutes until edges are golden and cheese melts.
  • Serve: Garnish with cilantro, Crema, or additional jalapenos if desired. Enjoy immediately!
