Description

Ingredients

  • 4 large eggs
  • 1 tablespoon milk or cream
  • 1 teaspoon chipotle powder
  • Salt and pepper to taste
  • 4 English muffins or sandwich buns, split and toasted
  • 4 slices crispy bacon
  • 1 avocado, sliced
  • 1/4 cup mayonnaise
  • 1 tablespoon chipotle in adobo sauce (or more for extra heat)
  • Butter or oil for cooking

Instructions

  1. In a small bowl, whisk together the eggs, milk or cream, chipotle powder, salt, and pepper.
  2. In a non-stick skillet, melt a little butter or heat a little oil over medium heat. Pour in the egg mixture and cook, stirring gently, until the eggs are just scrambled and soft. Remove from heat and set aside.
  3. For the chipotle mayo, in a small bowl, combine the mayonnaise and chipotle in adobo sauce. Mix well, adding more chipotle sauce if you like it spicier.
  4. To assemble the sandwiches, spread the chipotle mayo on the bottom half of each toasted English muffin or sandwich bun.
  5. Top with a scoop of scrambled eggs, followed by a slice of crispy bacon and a few slices of fresh avocado.
  6. Place the top half of the muffin or bun on top to complete the sandwich. Serve immediately and enjoy your spicy breakfast treat!

Notes

  • For extra flavor, you can also add some shredded cheese on top of the scrambled eggs before serving.
  • Adjust the level of spiciness by adding more or less chipotle powder or adobo sauce, depending on your preference.
  • If you prefer a lighter version, you can use turkey bacon or skip the bacon entirely and add spinach or arugula for a fresh bite.
