- 1/2 lb chorizo sausage
- 1 white onion, finely chopped
- 1 red bell pepper, diced
- 2 jalapeños, seeded and finely chopped
- 16 oz Velveeta cheese, cubed
- 1 cup sharp cheddar cheese, shredded
- 1 cup Monterey Jack cheese, shredded
- 1 (10 oz) can diced tomatoes with green chiles, undrained
- 1/2 cup milk
- 1/4 cup fresh cilantro, chopped
- 1 tsp cumin
- 1/2 cup black beans
- Salt and pepper to taste
Instructions
- Cook the Meat:
In a large skillet over medium heat, brown the ground beef and chorizo sausage until fully cooked, about 8 minutes. Drain any excess grease. - Cook the Vegetables:
Add the chopped onion, red bell pepper, and finely chopped jalapeños to the skillet. Cook for 5 minutes, stirring occasionally, until the vegetables have softened. - Add the Cheese and Tomatoes:
Reduce the heat to low. Add the cubed Velveeta cheese, shredded sharp cheddar cheese, shredded Monterey Jack cheese, diced tomatoes with green chiles (undrained), and milk. Stir continuously until the cheese is completely melted and the mixture is smooth and creamy. - Season and Add Cilantro:
Season the dip with cumin, salt, and pepper to taste. Stir in the chopped fresh cilantro just before serving.
Notes
- For extra heat, keep the seeds in the jalapeños or add a few dashes of hot sauce to the dip.
- You can use lean ground beef or turkey for a lighter version of the dip.
- Feel free to add more cheese for a richer, cheesier dip.
