  • 1 red bell pepper, sliced
  • 1 cup broccoli florets
  • 1 carrot, julienned
  • 3 cloves garlic, minced
  • 2 tbsp soy sauce
  • 1 tbsp rice vinegar
  • 1 tbsp chili garlic sauce (adjust to taste)
  • 1 tbsp honey
  • 1/2 tsp red pepper flakes (optional for extra heat)
  • 2 cups cooked rice (white, brown, or jasmine)
  • Sesame seeds for garnish (optional)
  • Green onions for garnish (optional)

Instructions

  1. Heat vegetable oil in a large skillet or wok over medium-high heat.
  2. Add the sliced chicken and cook for 4-5 minutes, stirring occasionally, until browned and cooked through. Remove the chicken from the pan and set aside.
  3. In the same pan, add a little more oil if needed, and sauté the garlic, red bell pepper, broccoli, and carrot for 3-4 minutes until tender-crisp.
  4. In a small bowl, whisk together soy sauce, rice vinegar, chili garlic sauce, honey, and red pepper flakes (if using).
  5. Return the cooked chicken to the pan with the vegetables, and pour the sauce over the mixture. Stir everything together, ensuring the chicken and vegetables are evenly coated in the sauce. Cook for another 2-3 minutes to heat through.
  6. Serve the stir-fry over cooked rice. Garnish with sesame seeds and green onions if desired.

  • Adjust the amount of chili garlic sauce to suit your spice tolerance.
  • For extra crunch, add cashews or peanuts to the stir-fry.
