- 1 bell pepper, chopped
- 1–2 teaspoons chili powder
- 1 teaspoon cumin
- Salt and pepper to taste
- 4 large flour tortillas
- 200g shredded cheese (cheddar or Monterey Jack)
- Fresh cilantro (optional, for garnish)
- Sour cream or salsa (for serving)
Instructions
- Cook mince: In a skillet, heat olive oil over medium heat. Add the chopped onion, minced garlic, and chopped bell pepper. Cook until softened, about 3-5 minutes. Add the minced meat, chili powder, cumin, salt, and pepper. Cook until the meat is browned, breaking it apart with a spatula.
- Assemble quesadillas: Place a tortilla in the skillet. Sprinkle with a generous amount of cheese. Add a portion of the mince mixture over the cheese, then sprinkle more cheese on top. Fold the tortilla in half.
- Cook quesadillas: Cook for 3-4 minutes on each side until golden brown and the cheese is melted. Repeat with the remaining tortillas and filling.
- Serve: Cut the quesadillas into wedges. Garnish with fresh cilantro, if desired, and serve with sour cream or salsa.
Notes
- For extra spice, add diced jalapeños to the filling.
