Description

These Spicy Mince Quesadillas are a perfect blend of savory ground beef, melted cheese, and a kick of chili. Quick to prepare and full of flavor, they make an excellent weeknight dinner or a fun snack for gatherings. Serve them with fresh cilantro and your favorite dips for an irresistible treat!

  • 500g ground beef or minced meat
  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 bell pepper, chopped
  • 12 teaspoons chili powder
  • 1 teaspoon cumin
  • Salt and pepper to taste
  • 4 large flour tortillas
  • 200g shredded cheese (cheddar or Monterey Jack)
  • Fresh cilantro (optional, for garnish)
  • Sour cream or salsa (for serving)

Instructions

  • Cook mince: In a skillet, heat olive oil over medium heat. Add the chopped onion, minced garlic, and chopped bell pepper. Cook until softened, about 3-5 minutes. Add the minced meat, chili powder, cumin, salt, and pepper. Cook until the meat is browned, breaking it apart with a spatula.
  • Assemble quesadillas: Place a tortilla in the skillet. Sprinkle with a generous amount of cheese. Add a portion of the mince mixture over the cheese, then sprinkle more cheese on top. Fold the tortilla in half.
  • Cook quesadillas: Cook for 3-4 minutes on each side until golden brown and the cheese is melted. Repeat with the remaining tortillas and filling.
  • Serve: Cut the quesadillas into wedges. Garnish with fresh cilantro, if desired, and serve with sour cream or salsa.

Notes

  • For extra spice, add diced jalapeños to the filling.
