Ingredients
Scale
For the Dish:
- 1 lb ground turkey (lean)
- 4 cups cauliflower rice (fresh or frozen)
- 1 tablespoon olive oil (or preferred cooking oil)
- 1/2 onion, diced
- 2 cloves garlic, minced
- 1 bell pepper, diced (optional)
- 1–2 tablespoons chili powder (adjust to spice preference)
- 1 teaspoon cumin
- 1/2 teaspoon paprika
- 1/4 teaspoon cayenne pepper (optional, for extra heat)
- Salt and pepper to taste
- 1/4 cup chopped cilantro (optional, for garnish)
- Lime wedges (optional, for serving)
Instructions
- Cook the Turkey:
In a large skillet, heat the olive oil over medium heat. Add the ground turkey, breaking it up with a spoon. Cook until browned and cooked through, about 5-7 minutes. Remove excess fat if needed. - Sauté the Vegetables:
Add the diced onion and bell pepper (if using) to the skillet with the turkey. Cook for 3-4 minutes, until softened. Add the minced garlic and cook for an additional 30 seconds. - Season the Turkey:
Sprinkle the chili powder, cumin, paprika, cayenne pepper (if using), salt, and pepper over the turkey and vegetables. Stir well to combine, allowing the spices to toast for about 1-2 minutes. - Add the Cauliflower Rice:
Add the cauliflower rice to the skillet with the turkey mixture. Stir everything together and cook for an additional 5-7 minutes, until the cauliflower rice is tender and has absorbed the flavors. - Serve:
Once everything is cooked and well-combined, remove from heat. Serve the spicy turkey cauliflower rice in bowls and garnish with fresh cilantro and lime wedges, if desired.
Notes
- You can add extra veggies like zucchini or spinach for added nutrition and flavor.
- If you want a milder version, reduce the amount of chili powder and cayenne pepper.
- You can use frozen cauliflower rice for convenience—just make sure to thaw and drain it before cooking.
