Description

This quick and easy Spinach and Egg Stir-Fry is the perfect light meal or side dish! With a savory combination of garlic, soy sauce, and sesame oil, this dish is packed with flavor and healthy ingredients. Ready in under 20 minutes, it’s the ideal option for busy weeknights or a nutritious lunch.

Ingredients

Scale
  • 1 tablespoon vegetable oil
  • 2 cloves garlic, minced
  • 1/2 pound fresh spinach, washed and drained
  • 2 eggs, beaten
  • 1 teaspoon soy sauce
  • 1/2 teaspoon sesame oil
  • Salt and pepper to taste

Instructions

  • Heat the vegetable oil: In a wok or large skillet, heat the vegetable oil over medium-high heat.
  • Cook garlic: Add the minced garlic and stir-fry for about 30 seconds until fragrant.
  • Cook spinach: Add the fresh spinach to the pan and stir-fry until wilted, about 2 minutes.
  • Scramble the eggs: Push the spinach to one side of the pan and add the beaten eggs to the open side. Scramble the eggs lightly.
  • Combine: Once the eggs are set, mix them with the spinach.
  • Season: Add the soy sauce, sesame oil, salt, and pepper. Stir everything together to combine and coat the ingredients in the seasonings.
  • Serve: Serve the spinach and egg stir-fry hot with rice or noodles as a main dish or a side.

Notes

  • You can substitute the soy sauce with tamari for a gluten-free version.
  • Add chili flakes or fresh chili for some extra heat if you prefer a spicier dish.
  • Serve with a side of steamed rice or noodles to make this dish more filling.
  • For a richer flavor, consider adding a dash of oyster sauce or hoisin sauce.
