This quick and easy Spinach and Egg Stir-Fry is the perfect light meal or side dish! With a savory combination of garlic, soy sauce, and sesame oil, this dish is packed with flavor and healthy ingredients. Ready in under 20 minutes, itโ€™s the ideal option for busy weeknights or a nutritious lunch.

Ingredients

Scale
  • 1 tablespoon vegetable oil
  • 2 cloves garlic, minced
  • 1/2 pound fresh spinach, washed and drained
  • 2 eggs, beaten
  • 1 teaspoon soy sauce
  • 1/2 teaspoon sesame oil
  • Salt and pepper to taste

Instructions

  • Heat the vegetable oil: In a wok or large skillet, heat the vegetable oil over medium-high heat.
  • Cook garlic: Add the minced garlic and stir-fry for about 30 seconds until fragrant.
  • Cook spinach: Add the fresh spinach to the pan and stir-fry until wilted, about 2 minutes.
  • Scramble the eggs: Push the spinach to one side of the pan and add the beaten eggs to the open side. Scramble the eggs lightly.
  • Combine: Once the eggs are set, mix them with the spinach.
  • Season: Add the soy sauce, sesame oil, salt, and pepper. Stir everything together to combine and coat the ingredients in the seasonings.
  • Serve: Serve the spinach and egg stir-fry hot with rice or noodles as a main dish or a side.

Notes

  • You can substitute the soy sauce with tamari for a gluten-free version.
  • Add chili flakes or fresh chili for some extra heat if you prefer a spicier dish.
  • Serve with a side of steamed rice or noodles to make this dish more filling.
  • For a richer flavor, consider adding a dash of oyster sauce or hoisin sauce.
