Description

Delicious chicken breasts stuffed with a savory mixture of spinach, feta cheese, and sun-dried tomatoes, baked to perfection for a healthy and flavorful meal.

Ingredients

4 boneless, skinless chicken breasts
1 tablespoon olive oil
1 onion, finely chopped
2 cloves garlic, minced
5 ounces fresh spinach, chopped
1/2 cup crumbled feta cheese
1/4 cup sun-dried tomatoes, chopped
Salt and pepper to taste
Toothpicks for securing


Instructions

  • Preheat your oven to 375°F (190°C).
  • In a skillet, heat the olive oil over medium heat. Add the chopped onion and minced garlic, and sauté until the onion becomes translucent.
  • Add the chopped spinach to the skillet and cook until wilted. Remove from heat and let cool slightly.
  • In a bowl, mix the cooked spinach mixture, crumbled feta cheese, and chopped sun-dried tomatoes. Season with salt and pepper to taste.
  • Butterfly each chicken breast carefully and pound them to an even thickness.
  • Spoon the spinach and feta mixture onto each chicken breast, then roll them tightly, securing each with toothpicks.
  • Place the stuffed chicken breasts seam side down in a baking dish.
  • Bake in the preheated oven for 25-30 minutes, or until the chicken is cooked through and the juices run clear.
