- 1/2 tbsp olive oil
- 1 clove garlic, minced
- 1/4 lb frozen chopped spinach
- Salt and pepper, to taste
- 4 slices bread
- 2 tbsp butter, softened
- 1 cup shredded mozzarella
- 1 oz feta cheese, crumbled
- Pinch of crushed red pepper flakes (optional)
Instructions
- Sauté the Spinach: In a skillet over medium heat, add olive oil and minced garlic. Sauté for about 1 minute, then add frozen spinach (no need to thaw) along with a pinch of salt and pepper. Continue to cook until most of the moisture has evaporated from the skillet. Set aside.
- Prepare the Bread: Butter one side of each bread slice. Place them buttered-side down on a flat surface to build the sandwiches.
- Assemble the Sandwiches: On two slices of bread, layer half of the shredded mozzarella, followed by the crumbled feta, cooked spinach, and a sprinkle of crushed red pepper flakes, if desired. Top with the remaining shredded mozzarella, then place the second slice of bread on top with the buttered side facing out.
- Cook the Grilled Cheese: Heat a large skillet over medium-low heat. Once hot, add the sandwiches and cook each side until golden brown and crispy, about 3-4 minutes per side, until the cheese is melted and gooey.
