Description

A delicious twist on the classic grilled cheese, this Spinach and Feta Grilled Cheese combines creamy mozzarella, tangy feta, and nutritious spinach for a satisfying meal that’s perfect for lunch or dinner.


Ingredients

  • 1/2 tbsp olive oil
  • 1 clove garlic, minced
  • 1/4 lb frozen chopped spinach
  • Salt and pepper, to taste
  • 4 slices bread
  • 2 tbsp butter, softened
  • 1 cup shredded mozzarella
  • 1 oz feta cheese, crumbled
  • Pinch of crushed red pepper flakes (optional)

Instructions

  • Sauté the Spinach: In a skillet over medium heat, add olive oil and minced garlic. Sauté for about 1 minute, then add frozen spinach (no need to thaw) along with a pinch of salt and pepper. Continue to cook until most of the moisture has evaporated from the skillet. Set aside.
  • Prepare the Bread: Butter one side of each bread slice. Place them buttered-side down on a flat surface to build the sandwiches.
  • Assemble the Sandwiches: On two slices of bread, layer half of the shredded mozzarella, followed by the crumbled feta, cooked spinach, and a sprinkle of crushed red pepper flakes, if desired. Top with the remaining shredded mozzarella, then place the second slice of bread on top with the buttered side facing out.
  • Cook the Grilled Cheese: Heat a large skillet over medium-low heat. Once hot, add the sandwiches and cook each side until golden brown and crispy, about 3-4 minutes per side, until the cheese is melted and gooey.
