Filling:

  • 2 cups frozen chopped spinach, thawed and drained
  • 2 cups ricotta cheese
  • 1/2 cup freshly grated Parmesan
  • 1 tablespoon minced garlic
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 egg, whisked

Pastry and Topping:

  • 4 sheets of puff pastry, thawed
  • 2 tablespoons sesame seeds
  • 1 egg, whisked (for brushing)

Instructions

  • Prepare the Spinach:
    Thaw the spinach by placing the frozen spinach bag in a large bowl filled with warm water, occasionally breaking up frozen chunks with your hands. Once thawed, transfer the spinach to a fine mesh sieve and press out all excess water.
  • Make the Filling:
    In a mixing bowl, combine the spinach, ricotta, Parmesan, garlic, salt, pepper, and 1 whisked egg. Mix well until fully combined.
  • Assemble the Rolls:
    Lay out the thawed puff pastry sheets on a flat surface. Spread the spinach and ricotta mixture evenly across each sheet, leaving a small border around the edges. Carefully roll each sheet into a log shape.
  • Chill the Rolls:
    Place the rolls on a baking sheet and refrigerate for 10 minutes to set.
  • Cut and Prepare for Baking:
    Preheat the oven to 350°F (175°C). Remove the rolls from the refrigerator and use a sharp serrated knife to cut each roll into 2 or 3 smaller pieces. Place the pieces back on the baking sheet. Whisk the remaining egg and brush it over the tops of each roll. Sprinkle with sesame seeds.
  • Bake:
    Bake in the preheated oven for 30 minutes, or until the puff pastry is golden brown and flaky.

Notes

  • Make sure to thoroughly drain the spinach before mixing it with the other ingredients to prevent excess moisture in the rolls.
