Description

A creamy and cheesy chicken casserole loaded with spinach, cream cheese, and melted mozzarella for a comforting and nutritious meal.


Ingredients

  • 3 cups cooked chicken, shredded or diced
  • 2 cups fresh spinach, chopped
  • 8 oz cream cheese, softened
  • 1 1/2 cups shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup sour cream
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a skillet, heat olive oil over medium heat. Sauté onion and garlic until fragrant and translucent, about 3-4 minutes.
  3. Add chopped spinach and cook until wilted, about 2 minutes. Remove from heat.
  4. In a large bowl, combine cream cheese, sour cream, mozzarella (reserve 1/2 cup for topping), Parmesan, salt, and pepper.
  5. Stir in cooked chicken and sautéed spinach mixture until well combined.
  6. Transfer mixture to a greased baking dish and spread evenly.
  7. Sprinkle reserved mozzarella cheese on top.
  8. Bake for 25-30 minutes until bubbly and golden on top.
  9. Let rest for 5 minutes before serving.

Notes

  • For extra flavor, add a pinch of red pepper flakes or Italian seasoning.
  • Can substitute frozen spinach (thawed and drained) for fresh spinach.
  • Serve with a side of rice or crusty bread.
