A creamy and cheesy chicken casserole loaded with spinach, cream cheese, and melted mozzarella for a comforting and nutritious meal.

- 3 cups cooked chicken, shredded or diced
- 2 cups fresh spinach, chopped
- 8 oz cream cheese, softened
- 1 1/2 cups shredded mozzarella cheese
- 1/2 cup grated Parmesan cheese
- 1/2 cup sour cream
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1 tbsp olive oil
- Salt and pepper to taste
Instructions
- Preheat oven to 350°F (175°C).
- In a skillet, heat olive oil over medium heat. Sauté onion and garlic until fragrant and translucent, about 3-4 minutes.
- Add chopped spinach and cook until wilted, about 2 minutes. Remove from heat.
- In a large bowl, combine cream cheese, sour cream, mozzarella (reserve 1/2 cup for topping), Parmesan, salt, and pepper.
- Stir in cooked chicken and sautéed spinach mixture until well combined.
- Transfer mixture to a greased baking dish and spread evenly.
- Sprinkle reserved mozzarella cheese on top.
- Bake for 25-30 minutes until bubbly and golden on top.
- Let rest for 5 minutes before serving.
Notes
- For extra flavor, add a pinch of red pepper flakes or Italian seasoning.
- Can substitute frozen spinach (thawed and drained) for fresh spinach.
- Serve with a side of rice or crusty bread.
