Description

A refreshing and vibrant Spinach & Fruit Salad, perfect for brunch or as a light side dish. This salad combines fresh baby spinach with juicy strawberries and blueberries, topped with a creamy dressing and optional goat cheese for added flavor.


Ingredients

  • ½ cup milk
  • Juice of ½ a lemon
  • ½ cup mayonnaise or light mayonnaise
  • 1½ tablespoons Onion Onion™ Seasoning
  • 1 tablespoon honey
  • 1 (10 ounce) package fresh baby spinach leaves
  • 2 cups sliced fresh strawberries
  • 1 cup fresh blueberries
  • ½ cup sliced almonds, toasted
  • ½ cup crumbled goat cheese (optional)
  • Fresh cracked black pepper (optional)

Instructions

  • Make the Dressing: In a small bowl, combine the milk and lemon juice. Let it stand for 1-2 minutes until it thickens slightly. Whisk in the mayonnaise, Onion Onion Seasoning, and honey. Season with salt and pepper to taste.
  • Prepare the Salad: In a large bowl, combine the fresh baby spinach, sliced strawberries, blueberries, and toasted sliced almonds.
  • Toss and Serve: Drizzle the salad with the desired amount of dressing and toss gently to combine. If using, top with crumbled goat cheese and freshly cracked black pepper.
