Description

This Spring Cheesecake Cake combines two of the most beloved desserts—cheesecake and cake—into one showstopping dessert! For the Cake:

  • 1 box (15.25 oz) vanilla or yellow cake mix
  • 3 large eggs
  • 1/2 cup vegetable oil
  • 1 cup water

For the Cheesecake Layer:

  • 1/2 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract

For the Topping:

 

  • 1 1/2 cups fresh mixed berries (strawberries, raspberries, blueberries, etc.)
  • 1/4 cup powdered sugar
  • 1 teaspoon lemon zest (optional, for added flavor)

Instructions

  1. Preheat the oven:

    • Preheat your oven to 350°F (175°C). Grease and flour a 9-inch round cake pan or springform pan.
  2. Prepare the cake batter:

    • In a large bowl, prepare the cake batter according to the package instructions, using eggs, oil, and water. Mix well until smooth.
  3. Prepare the cheesecake layer:

    • In another bowl, beat the softened cream cheese and sugar together until smooth and creamy. Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
  4. Assemble the cake:

    • Pour the cake batter into the bottom of the prepared pan. Then, gently spoon the cheesecake mixture over the cake batter. Use a spatula to smooth the top of the cheesecake layer evenly.
  5. Bake the cake:

    • Bake in the preheated oven for 45-50 minutes, or until a toothpick inserted into the center comes out clean (a little cheesecake may stick to the toothpick, but the cake portion should be fully cooked).
  6. Cool the cake:

    • Allow the cake to cool in the pan for 10 minutes, then transfer it to a wire rack to cool completely.
  7. Prepare the topping:

    • Once the cake has cooled, prepare the topping by mixing fresh berries with powdered sugar. If desired, add lemon zest for extra flavor.
